Gluten Free Spicy Pulled Pork Stew
1 1/2 - 2 pounds pork loin
2 tablespoons oil
4 garlic cloves, chopped
1 cup onion, chopped
24 ounces (3 cups) salsa
2 cups chicken broth
1 cup carrots, chopped small
4 ounces green chilies, drained
16 ounces refried beans
2 - 15 ounce black beans, drained and rinsed
14.4 ounces frozen corn
4 cups red potatoes, small cubes
2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt


Lightly salt pork loin and brown in oil. Add garlic and onion and sauté 2 minutes. Add salsa and broth. Slow cook for 2 1/2 hours then add carrots, chilies, refried beans, black beans, corn, potatoes and spices. Continue cooking for another hour. Remove pork, shred, and return to stew.

Continue to cook for another 30-45 minutes. Serve with cilantro, sour cream, and cheese.

Cooking times will vary depending on your type of slow cooker.
