1 ripe avocado, peeled and mashed
1 small garlic clove, minced
1 tablespoon fresh cilantro, finely chopped
1 tablespoon lime juice
¼ cup sweet onion, chopped
¼ cup chopped tomato
¼ cup light sour cream
1 cup low-sodium black beans, drained and rinsed
¼ teaspoon salt
¼ teaspoon pepper
¾ teaspoon chili powder
½ teaspoon cumin
¼ teaspoon red pepper flakes
8 ounces deli turkey slices or sliced grilled chicken
1 cup cucumber, thinly sliced
4 flour tortillas or Garden Ranch Flat Bread
4 green leaf lettuce leaves
DirectionsIn a small bowl, combine avocado and the next 6 ingredients for guacamole, mix well.
Combine black beans and next 5 ingredients in a small bowl and toss, slightly mashing the beans.
Place 1 lettuce leaf on each tortilla. Spread ¼ of the guacamole on each lettuce leaf. Top with about ¼ of the bean mixture. Top each serving with 2 ounces of turkey and ¼ cup cucumber. Roll up and serve immediately or wrap in foil or parchment paper and chill.
