Hot Fudge Filled Chocolate Lava Cookies


1c butter
1c sugar + ¼ c for rolling
½ c brown sugar, packed
2 eggs
1tsp vanilla extract
1 TBSP water
1tsp salt
1tsp baking soda
2/3c unsweetened cocoa powder
2c flour
Jarred hot fudge sauce


Preheat oven to 400 degrees. Line two cookie sheets with parchment paper and set aside. Cream butter and sugars with an electric mixer. Add eggs, vanilla, and water, beat until smooth. Add salt, baking soda, cocoa powder, flour, and mix well.

Divide the dough into 24 pieces. Place a piece of cookie dough in your hand and flatten it out like a thick disk. Place a little hot fudge (about ½ tsp) in the middle of the dough and wrap the dough around it, rolling it into a ball to seal it.

Place ¼ cup of sugar in a small bowl. Roll the cookie ball in sugar and place on the parchment lined baking sheet. Repeat with remaining dough, spacing it out on the cookie sheets. Bake 6-8 minutes or until the cookies are set and start to slightly crack. Enjoy.
