Majestic Mediterranean Pasta


8 oz penne pasta
1 garlic clove, minced
Juice from 1/2 lemon
1/4 cup sundried tomato
1/4 cup kalamata and green olives, sliced
1 10 oz jar artichoke hearts, drained and sliced
2 tbs fresh parsley
1/2 cup fresh spinach
1 tbs olive oil
Dash of cayenne
Dash of kosher salt
1/2 cup feta cheese


1) Bring a pot of water to a boil and cook penne pasta according to package directions. Drain and set aside.

2) Heat olive oil and remaining ingredients, except feta cheese, in a skillet on low heat for about five minutes.

3) Add pasta and toss.

4) Plate and garnish with feta.

5) Serve immediately.
