Mango Yogurt and Ginger-Cookie Parfait


1 mango, peeled, pitted, and diced
1 peach, pitted, diced
1/4 cup granulated sugar
1 orange, zested and juiced
1 lime, zested and juiced
1 1/2 cups heavy cream
3 tablespoons confectioners’ sugar
1 teaspoon vanilla extract
Mango-flavored yogurt
Gingersnaps, crushed


Combine in large bowl: mango, peach, granulated sugar, orange zest and juice, and lime zest and juice; toss to coat. Let sit, stirring occasionally, 20–30 minutes.

In a separate bowl, whip cream, confectioners’ sugar, and vanilla until soft peaks form.

Assemble parfait in 8-oz glasses. Layer yogurt, whipped cream, mango\peach mixture and gingersnaps evenly amongst glasses.
