Mini Sweet Potato Souffle Pie


3 Large sweet potatoes
2 Sticks butter
3 ½ Cups of sugar
1/2 Cup condensed milk
1/2 Cup evaporated milk
3 Eggs beaten
½ Teaspoon salt
1 Tablespoon lemon flavor
¼ Tablespoon vanilla flavor
½ Cup self-rising flour
1 Medium bag miniature marshmallows


Boil potatoes until completely soft.
Drain and peel warm potatoes.
Add whole potatoes, melted butter, sugar, condensed milk, eggs, lemon flavor, vanilla flavor and flour.
Mix well.
Pour into mini pie shells.
Bake at 375 degrees for 25 to 30 minutes.
Remove from oven, cover top with marshmallows and then bake until golden brown.
