2/3 c natural peanut butter
2 Tbsp. coconut oil
1 tsp. vanilla extract
1 c unsweetened shredded coconut flakes
Unsweetened chocolate, melted (optional for drizzle)
DirectionsPlace the peanut butter and coconut oil in a medium microwavable bowl. Microwave for 30 seconds, stir to combine. Add the vanilla and stir. Add the unsweetened shredded coconut flakes and mix until evenly coated.
Dollop the mixture on a parchment-lined baking sheet. Each cookie should be around 1 ½ inches wide. Freeze until solid, about 15-20 minutes.
If you would like a little touch of chocolate, you can lightly drizzle the cookie with some melted unsweetened chocolate. Store in the refrigerator in an airtight container or bag. Enjoy!
