No bake energy snack bars


1c Oatmeal old fashion
1/2 c flax seed
1/2 c coconut
1/4 c raisins
1/2 cup peanut butter or Nutella
1/3 c honey
1 teaspoon vanilla
12 oz dark chocolate chips for melting
For added protein you may add a scoop of your favorite protein powder to mix


In a bowl combine oatmeal flax seed coconut flakes and raisins (for kids version you may choose to add their favorite candy or cereal) next add nut butter and vanilla... Mix thoroughly... Batter may seem a bit sticky but no worries... If mixing with a spoon becomes too time consuming try mixing with your hands (makes for a tasty clean up when done 😄)

Once mixed roll wax paper into a sheet pan and spread mixture on to pan... Refrigerate until hardened...

For chocolate coat:
melt chocolate in a tall 12oz glass... Place a skewer into one end of your bar and dip in melted chocolate being sure to get an even coat then refrigerate for a few minutes or until hardened

Another option may be to pour melted chocolate over the bar being sure to immediately remove it to a clean wax paper to dry
