Okra Masala


1/2 cup fresh okra, sliced
1/2 cup fresh cauliflower, sliced
1/2 cup fresh eggplant, sliced
1/2 cup fresh spinach
1/8 cup minced onion
1/8 cup sliced carrots
1/8 cup sliced mushrooms
1/8 cup sliced bell peppers
1/8 cup sliced broccoli
1/8 tsp yellow curry
1/8 tbs red curry paste
1/8 tbs Indian Masala
1/4 cup tomato sauce
Dash of salt
Dash of garlic
2 tbs olive oil


Saute okra, cauliflower and eggplant in one tbs of olive oil until slightly seared and set aside.

Saute minced onion, carrots, mushroom, peppers and broccoli in one tbs of olive oil until tender.

Combine cooked vegetables, add spices and allow to simmer for 2 minutes.

Remove from heat, toss with fresh spinach and serve over your favorite rice.
