Organic Kale Salad with Chipotle Vinaigrette


Chipotle Vinaigrette
Yields 1 ½ cups
1 ¼ cups red wine vinegar
2 large cloves garlic, chopped
½ tablespoon ground cumin
½ tablespoon paprika
1 bunch cilantro, picked and chopped
2 oz honey
1 ½ tablespoons chipotle, minced
2 limes, zested & juiced
½ tablespoon Dijon mustard
1 ¼ cups olive oil

Organic Kale Salad Build
2 oz chiffonade organic kale
1 ½ oz chipotle vinaigrette
¼ each diced avocado
2 tablespoons hominy
2 tablespoons feta
2 tablespoon tortilla strips


Chipotle Vinaigrette

Combine red wine vinegar, garlic, cumin, paprika, cilantro, honey, chipotle, lime zest and juice and Dijon mustard in a large mixing bowl and whisk to blend well.

Slowly drizzle in oil while whisking to create an emulsion.

Organic Kale Salad

Toss kale and dressing in mixing bowl and place on plate.

Garnish with remaining ingredients.
