Pan Fried Smashed Baby Reds


8-10 baby red potatoes
1/2 cup extra-virgin olive oil
Salt and Pepper- to taste
Fresh Herbs (parsley, basil, or cilantro)


1. Preheat oven to 350
2. Wash potatoes, drain and coat with oil, place on sheet pan and bake for 20 min. or until a fork goes in easily
2. Gently press potatoes to about 3h/4 inch thick with a potato masher or by hand, keeping potatoes intact as much as possible
3. Heat oil in a skillet. Place potatoes in the pan with a spatula; turn once, until golden brown, about 5-7 minutes
4. Coat with remaining oil, salt pepper and fresh herbs
5. Serve
