Panna Cotta


Panna Cotta
Yield about 4 – 8 oz portions
4 teaspoons gelatin powder
1 tablespoon cold water
4 cups heavy cream
½ cup sugar
2 vanilla beans, scraped

Macerated Strawberries
Yields about 2 cups
2 lb strawberries
¼ cup sugar
¼ cup champagne vinegar


Soak gelatin in cold water until fully hydrated.

Place heavy cream, sugar, and vanilla bean seeds and pods in pot and bring to a simmer to dissolve sugar
Heat gelatin mixture in microwave for a few seconds to liquefy and stir into pot with cream. Whisk until completely dissolved.

Place 1 tablespoon of soaked cherries at bottom of serving vessel and pour 8 oz of mixture over cherries. Repeat process with remaining portions. Refrigerate overnight to allow to set.

Macerated Strawberries

Wash and hull strawberries. Small dice and toss with sugar and vinegar. Let macerate for at least 30 minutes before serving.
