Queen's Tofu Scramble


4 oz organic extra firm tofu

2 oz olive oil

¼ cup sliced each mushrooms, broccoli, onion, tri-color bell pepper, zucchini, squash, spinach and cherry tomatoes

A dash each of black pepper, granulated garlic, salt, yellow curry and cayenne pepper


Pan sear vegetables in 1 oz olive oil until tender, set aside.

Saute tofu and spices in 1 oz olive oil until a slight crust forms on the tofu.

Combine tofu and vegetables, toss and serve with your favorite bread.
