Raspberry Kahlua Cream Parfaits


3 tablespoons 1/3 less fat cream cheese
1 (3.4 ounce) package instant vanilla pudding
2/3 cup skim milk
2 teaspoons instant expresso
2 tablespoons hot water
¼ cup Kahlua (0r additional dissolved instant expresso if you prefer)
2 cups Lite Cool Whip, divided
15 Chocolate wafers, crushed
2 pints fresh raspberries
2 tablespoons chocolate sauce
2 teaspoons Kahlua
Expresso beans, some whole and crushed for garnish and crunch


Dissolve instant espresso in 2 tablespoons hot water. Beat cream cheese with electric mixer in medium bowl. Add espresso mixture, Kahlua, instant pudding and milk, mix well. Fold in 1 cup Cool Whip. Chill until ready to assemble parfaits.

In parfait glass, sprinkle crushed wafers in bottom of 6 parfait glasses. Evenly divide raspberries and Kahlua cream between parfait glasses. Top with cool whip, additional raspberries, espresso beans and chocolate sauce. Serve immediately.
