Raw Platter


Salad Base
2 cups of organic Spring Mix
2 cups organic kale
1 cup broccoli
1 avocado
½ cup carrots
½ cup Portobello mushrooms
½ cup onion
½ cup zucchini
½ red cabbage
½ cup green cabbage
½ cup cucumbers
½ cup asparagus
½ cup dry seaweed
2 rice spring roll wrappers
½ green apple
½ cup strawberries
½ cup assorted nuts
½ cup black and green olives
Dash of salt
Dash of lemon pepper
1 tbsp. olive oil

Dipping Sauces
Thai Peanut Sauce
Indian Tamarind Sauce
Chinese Sweet & Sour Sauce
Mint Chutney
Balsamic Fig Dressing


Vegan Spring Rolls
Soak rice spring roll wrappers in hot water until pliable.

Toss your favorite ingredients in a bowl. Place about two tbsp. of the mixture in each wrapper and roll.

Serve with your favorite dipping sauce.

Vegan Platter
Assemble organic spring mix in center of plate. Add organic kale along perimeter of the plate.

Assemble the remaining ingredients on top of the fresh greens.

Drizzle your favorite dipping sauce.
