Roasted Red Pepper Hummus and Warm Pita


Makes 8-12 Servings

16 oz. Chickpeas
6 oz. Roasted Red Bell Peppers
1 Jalapeno, seeded, diced
1 Tbsp. Garlic, minced
3 Tbsp. Cilantro
1 tsp. Paprika
3 Tbsp. Onion, minced
1 tsp. Black Pepper
¼ C. Extra Virgin Olive Oil
4 Pita Bread, cut into wedges and toasted for service


Place all ingredients into a food processor, and blend until smooth.

Continue to blend ingredients and slowly drizzle in olive oil.

For pita bread, cut into wedges and drizzle lightly with olive oil. Place into a 350F oven for 5-7 minutes until toasted and warm throughout.

For service, place into a bowl and make a small indent with the back of a spoon in the middle of the mixture. Drizzle with olive oil, and surround with warm pita and serve.
