Sassy Salmon Cakes


1/2 pound uncooked salmon
1 tbsp diced celery
1 tbsp diced red onion
1 tbsp diced red/green/yellow peppers
1 tbsp of tarter sauce
1 1/2 tbsp panko bread crumbs
1/8 tsp salt
1/8 tsp old bay seasoning
1/8 tsp of fresh cilantro
1/8 tsp rosemary seasoning
1 tsp siracha
1 uncooked egg
4 tbsp olive oil


Saute salmon with 2 tbsp olive oil in a skillet for one minute on each side. Remove from heat, place in a bowl and allow to cool for 5 minutes.

Add minced vegetables, egg, panko and spices to salmon and hand toss.

Shape salmon mixture into round patties.

Place 2 tbsp olive oil in a skillet followed by patties and sear on each side for 30 seconds.

Remove from heat and place in oven at 350 degrees for 8 minutes.

Remove from oven and serve with your favorite dressing.
