Sausage and Roasted Potato Breakfast Casserole


1 pound Link Sausage, cut into small diagonal slices
6 medium Red Potatoes, cubed
1 bunch Green Onions, chopped
½ large Green Pepper, chopped
1 pound of Sliced Mushrooms (optional)
½ pound Colby and Cheddar Cheese, grated
Salt and Pepper
Old Bay or your other favorite seasoning for roasted potatoes


Preheat oven to 375◦. Cut red potatoes into bite size cubes. Place in a 9” X 13” baking pan or casserole dish. Coat with olive oil and sprinkle with salt, pepper and Old Bay (or any seasonings of your choice.) Roast in oven about 30 minutes until soft brown.
Cut link sausage into small diagonal slices. Saute’ sausage and chopped onions in skillet until brown. Add sausage mixture to cooked potatoes and top with cheese. Continue cooking about 10 minutes until cheese is melted.
