2 ¼ c flour
2 tsp. baking powder
½ tsp. salt
2 sticks unsalted butter, softened
1 ½ c sugar
2 large eggs
2 Tbsp. sugar
2 tsp. cinnamon

Makes about 20 cookies.


Preheat oven to 350 degrees. Prepare a cookie sheet with parchment paper.

Sift the first three dry ingredients together and set aside. Cream the butter and the sugar until light and fluffy, about 3-5 minutes. While creaming the butter and sugar, in a small bowl sift the 2 tablespoons of sugar and cinnamon and set aside.

Add the eggs to the butter mixture, one at a time until fully incorporated. Slowly add the sifted flour till combined.

Using a 1 ½ -2 oz. ice cream scoop, scoop out the dough and form it into a ball. Roll it around in the cinnamon sugar mixture to coat. Place balls of dough about 2 inches apart on the prepared cookie sheet.

Bake for 15-18 minutes or until lightly golden and crinkly on top. Cool completely.
