Strawberry Lemonade Cheesecake Dessert


• 2 (8 oz) packs of cream cheese
• 1 cup sugar
• 2 eggs
• 1 tablespoon vanilla extract
• 2 table spoons of lemon zest
• 1 teaspoon pure lemon extract
• 1 tablespoon of strawberry flavoring
• 1 cup fresh chopped strawberries
• 1 pack graham cracker crumbs
• 1 package lemon pudding mix (+ ingredients required) OR you can opt to use lemon pie filling for a simpler option


o Mix Cream cheese, sugar and vanilla extract then add eggs
o Separate batter into 2 bowl
o In one bowl add lemon zest and lemon extract
o In second bowl add approx. 2 tablespoons of chopped berries and strawberry flavoring – if no strawberry extract available use 1 – 2 tablespoons of strawberry jello powder
o Line small pan with parchment paper and spray with non stick spray – using one scoop at a time scoop both mixes in and swirl –
o Bake on 350 degrees for 20 minutes or until done
o When cool refrigerate for 2 or more hours
• Lemon Pudding Mix – follow directions on packet to create the mix and set aside
• Graham Cracker Crumbs – Combine 1 cup of crumbs with 2 tablespoons of sugar and 1 tablespoon of butter
• Once ingredients are all prepared use a cutter to cut cheesecake into circles large enough to fit in bowl
• In serving bowl add 1 table spoon of graham cracker crumbs mix – then cheesecake – then Lemon filing – top with fresh cut berries and a dollop of whipped cream
