Super Bowl Cookie Sandwiches


• 2 3/4 cups all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon baking powder
• 1 cup butter
• 1 ½ cup white sugar
• 1 egg
• 1 teaspoon vanilla extract

American Buttercream Filling
• 1/2 cup softened butter-flavored vegetable shortening
• 2 tablespoons vanilla
• ¼ cup water
• 2 cups powdered sugar


1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda and baking powder. Set aside.

2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients.

3. Color the cookie dough using gel food coloring. (We use gel because it is more concentrated and doesn’t change the texture or consistency of the dough. Liquid food coloring will not be as potent and may make the dough too soft).

4. Roll out dough about ¼ inch thick and press out football shape.

5. Place on cookie sheet about 2 inches apart.

6. Bake 12 – 15 minutes and let cool.

7. Once cooled, fill with icing color that corresponds to the colored cookie theme.

American Buttercream Filling
1. Combine shortening and vanilla and mix until fluffy. Slowly add sugar and the water a bit at a time until your batch is the right consistency- not too stiff but not too runny.

2. Separate icing into 2 bowls for filling.
