3 sweet potatoes
1 (15 ounce) can garbanzo or chick peas, drained, reserve liquid
6 garlic cloves (roasted)
2T extra-virgin olive oil
2T lemon juice
1/4 t ground cumin
1/4 t ground pepper
Salt to taste
Directions1. Preheat oven to 350 degrees
2. Poke holes in Sweet potatoes with a fork. Coat with oil.
3. Bake sweet potatoes in the oven until soft, about 30-45minutes; let cool.
4. Combine garbanzo beans and olive oil in a food processor and pulse. Scoop flesh out of sweet potato peels add and pulse to combine. Add tahini, lemon juice, cumin, garlic, honey, pepper, and salt to mixture; blend until smooth
5. Serve with veggies or pita
