Taco Cupcakes


1 pound ground turkey
1 tbsp onion powder
1 tbsp garlic powder
1 tsp chopped garlic
2 Tsp cajun seasoning
36 wonton wrappers
1 (16 ounce) can black beans
1/4 cup fresh chopped spinach
2 cups shredded cheddar cheese
Sour optional toppings: cream, diced tomatoes, cilantro, onion


Preheat the oven to 350°F.

Add ground turkey, onion & garluc powder in a skillet. Cook ground turkey through and drain the fat. Set aside.

Cook black beans, chopped garlic and chopped spinach in small sauce pan until warm. Drain & set aside

Spray muffin tins with cooking spray. Place one wonton wrapper in the bottom of each muffin cup. Layer about 1 tbsp of ground turkey and black beans on top of each wonton. Top with 1 tbsp of shredded cheese.
Bake for 8-10 minutes or until golden brown.

Remove cupcakes from tin and top with your favorite taco toppings (i.e. sour cream, diced tomatoes, onion, cilantro, etc).
