Veggie Frittata


Serves 4

2 tablespoons olive oil
1 1/2 cups broccoli florets, broke into bite-size pieces
1/2 cup yellow onion, diced
1/2 cup red bell peppers, diced
4 oz cremini mushrooms, sliced
1 tablespoon chopped garlic
8 large eggs
1 cup Manchego cheese, grated
Kosher salt
Ground black pepper


Preheat oven to 350°F and a large cast iron skillet on medium-high.

Add olive oil to skillet and sauté broccoli, onions, bell peppers, mushrooms and garlic until tender.

Whisk eggs and cheese in a bowl and add to pan with veggies. Transfer skillet to oven and bake 10–12 minutes or until eggs have set and become firm.

Remove pan from oven. Slice and serve while warm.
