Wild Rice & Micro Green Salad


1 cup cooked black rice
1 cup cooked basmati rice
1/4 cup chopped green onion
1/4 cup sliced red onion
1/4 cup sliced almonds
1/4 cup raisins
1/2 cup assorted micro greens
3 leaves of fresh mint and cilantro
1/2 fresh lemon
1/8 tsp salt, garlic, black pepper
2 tbs olive oil


1. Saute almonds, rice, raisins and spices in oil until rice is warm and almonds are toasted.
2. Set aside to cool.
3. Toss rice mixture with remaining vegetables.
4. Add fresh squeezed lemon juice, serve and enjoy!
