Cherry Rankin stops by the studio to show us how to make a cheesy and smoky dish. The ingredients are listed below: 1 pound potatoes, each cut into 8 pieces 1/4 cup salt 14 oz pack of little smokies, sliced 1 medium-size sweet onion, sliced thin 2 tablespoons red wine vinegar 3 cups arugula 1/2 cup shredded Parmesan cheese The cooking instructions are as follows: 1. Place the potatoes, salt, and water in a medium saucepan. Bring to a boil over high heat, reduce the heat to medium low and simmer until tender when pierced. Drain in place in a single layer baking dish cool completely for 15 minutes. 2. Cook the sausage and a large skillet over medium heat stirring often until brown. Remove sausage from skillet leave the dripping from the sausage in the skillet. 3. Cook the potatoes in the hot dripping over medium heat, stirring until the potatoes are browned and crisp, add the onions cook until tender at the vinegar and cook for 30 seconds. 4. Stir in the sausage, onion, and arugula then cook, stirring until the arugula is wilted about five minutes. transfer to serving platter top with Parmesan cheese Optional: you can add fried eggs on top
