Bahamian Coconut Jimmy



Ingredients

• 3 cups all-purpose flour
• ½ teaspoon baking powder
• ½ tablespoon vanilla
• ¼ cup butter (or shortening), very soft
• 1 cup water
• ½ cup coconut milk
• 1 cup sugar
• 2 ½ cups shredded coconut
• 3 cups sugar
• 3 tablespoons butter
• 1 cup coconut milk
• 2 cups water

Directions

1. To make “dough batter,” combine flour, baking powder, butter, water, vanilla and coconut milk. Mix completely until batter is thick enough to be spooned, but not as stiff as dough (this way produces a softer dough when cooked – however many Bahamians opt to make it as a full dumpling (rolled dough). Once done, set aside.

2. On medium heat, place butter in a pot and allow to brown – add coconut and sugar and let simmer for a few minutes. This allows your coconut to caramelize and get a rich brown color. Continue to stir on medium then add water and coconut milk.

3. Once this mixture begins to simmer down, you should notice that there seems to be more water in the pot – now is the time to add your dough. Using a spoon, randomly drop the dough into the coconut mixture at different intervals and cover with the coconut mixture. Cover and allow to simmer until dough is completely cooked.

4. Once the dough is cooked you should notice less water in the pot – and more of the coconut dough mixture. Eat warm and enjoy a little taste of the Bahamas.
