Berry Mascarpone Parfait


1 lb mixed berries
1 orange, zested
1/2 cup granulated sugar, divided
1 tablespoon white balsamic vinegar
1/2 teaspoon vanilla extract
8 oz mascarpone cheese
3/4 cup heavy cream
1/2 teaspoon rum extract
Toasted almonds, for garnish


Combine berries, orange zest, 1/4 cup sugar, vinegar, and vanilla in a bowl. Stir until well mixed, and set aside.

In a medium bowl, combine mascarpone, heavy cream, rum extract, and remaining 1/4 cup sugar. Beat mascarpone mixture in a stand mixer until medium firm peaks form.

To assemble, place some berries in the bottom of 6 individual dessert cups or glasses. Top with some mascarpone mixture.

Repeat with one more layer of each. Drizzle with remaining berry juice, garnish with almonds and serve immediately.
