Blackened Gator Tail



Ingredients

• 3 cup Corn Kernel, fresh
• 1 cup Water
• 1 cup Chicken Stock
• 4 oz Butter
• 1/2 Yellow Onions, finely chopped
• 4 Garlic Cloves, minced
• 1/2 Red Bell Pepper, small diced
• 1/2 Green Bell Pepper, small diced
• 1/2 Jalapeño, seeded, minced
• 1 pinch Cayenne Pepper
• 1 cup Water, as needed to deglaze
• 2 Egg Yolks
• 3/4 cup Cream
• Salt and Pepper to taste

Directions

• Shuck fresh corn and cut kernels off the cob.
• Combine corn, 1 cup water, stock, butter, onions, garlic, peppers and cayenne into a sauce pot.
• Bring to a simmer, and continue to cook until all liquid has cooked down and evaporated.
• Add 1/4 cup of water at a time to deglaze pan. Continue cooking, stirring with a rubber spatula, to develop deeper flavor.
• Whisk together cream and egg yolks. (Liaison)
• Turn down heat, and slowly add egg mixture.
• Fold Maque Choux and allow to thicken.
• Serve immediately!
