Boneless Fried BBQ Ribs

• 2 racks St. Louis ribs
• Kosher salt
• Ground black pepper
• Flour
• Favorite BBQ sauce

• Remove ribs from package. Don't wash yet.
• Flip ribs over so that the rib meat is on the cutting broad and and the bones are facing up. Remove the inner lining from bone.
• Then, gently carve out the bone and remove from the meat.
• Once completed, wash with cool water, season and refrigerate. Allow to marinate for 24 hrs.
• Remove boneless ribs from marinade.
• Season flour and sit to the side.
• Fill 1/3 large frying pan with oil.
• Bring to a medium heat.
• Toss uncooked ribs in the seasoned flour. Shake off excess flour.
• When the temperature of the oil reach 320 degrees, place floured ribs in the pan.
• Cook for 5 minuets on each side.
• Set oven at 350 degrees. Place cooked ribs on a cookie sheet to finish in the oven.
• Cook until internal temperature reaches 160 degrees.
• Now for the fun part...brush your favorite BBQ sauce on both sides of the fried ribs and place back in the oven for a few minutes to caramelize the BBQ sauce.
• Remove from oven and serve with your favorite starch and vegetables. Enjoy!
