1 ¼ t (10 tsp.) butter at room temperature
¾ c dark brown sugar
¼ c granulated sugar
1 large egg at room temperature
1 tsp. pure vanilla
2 tsp. bourbon
1 ½ c all-purpose flour
¾ tsp. baking soda
½ tsp. salt
1c chopped dark chocolate (optional)
DirectionsPreheat oven to 375 degrees.
Brown the butter in a skillet over medium heat, swirling 8- 10 minutes; let cool.
In a bowl whisk the flour, baking soda and salt, set aside.
In the bowl of an electric mixer with a paddle attachment cream together the cooled brown butter and sugars till light and fluffy. Beat in the egg, bourbon and vanilla. Reduce the mixer speed to low and add the flour mixture until just combined. If adding dark chocolate, fold it in now.
Using a 1 ½ inch scoop, arrange them 2 inches apart on a lined baking sheet. Bake until set around the edges, 12-15 minutes.
Let cool 10 minutes on the pans and then transfer to a wire rack to finish cooling.
