Carrot & Ginger Soup


• 12 oz Carrots, peeled, chopped evenly
• 3 oz Onions, diced
• 1 tsp Ginger, peeled, minced
• 1 1/2 qt. Vegetable stock
• Green Onions, garnish, thinly sliced
• Salt
• Pepper


• In a medium soup pot add carrots, onions, ginger and stock. Allow to cook until vegetables are fork tender. Add salt and pepper to taste.

• In a blender, add soup to purée. Blend until it reaches a smooth consistency. Adjust liquid if too thick.

• Garnish with green onions and enjoy!
