Cubanito Quesadilla


2 oz unsalted butter
4 large flour tortillas
8 oz mojo pork
2 oz deli ham, sliced
2 oz Dijon mustard
8 slices Swiss cheese
8 dill pickle planks


Preheat oven to 400ºF.

Spread butter evenly on both sides of each tortilla. Place even portions of pork, ham, mustard, cheese, and pickles in one-half of each tortilla; fold tortillas in half.

Preheat a large sauté pan over medium-high heat; cook each quesadilla until golden on both sides. Remove from pan, place on baking sheet and bake until cheese is melted. Slice and serve.
