Goat Cheese, Arugula and Sweet Onion Pie


2 sweet onions, julienned
3 tablespoons extra-virgin olive oil
3 eggs, beaten
2 tablespoons Greek yogurt
Kosher salt and ground black pepper
1 (9-inch) pie shell, par-baked
2 oz goat cheese, large crumbles
1/2 cup baby arugula


Preheat oven to 350°F.

Heat a large sauté pan over medium heat; Add oil and onions and sauté until golden brown, stirring often, about 20 minutes. Cool to room temperature.

Beat eggs and yogurt together until well blended; season with salt and pepper.

Line pie shell with onions, goat cheese and arugula. Pour egg mixture into pie shell; bake 30 minutes, or until center is firm. Remove from oven and cool. Slice and serve.

Serves 8.
