Haitian Cake



Ingredients

• 2 cups cake flour
• 2 sticks butter, softened
• 2 cups sugar
• 1 can evaporated milk
• 3 eggs, separate yolks from whites
• 3 tsp baking powder
• 2 tsp vanilla extract
• 1 tsp lime zest
• 1 tsp nutmeg
• 1 tsp cinnamon
• 2 pinches salt
• 2 tbsp dark rum (Barbancourt)

Directions

• Preheat oven at 325.
• Cream sugar and butter until butter mix is fluffy.
• Add lime zest, vanilla extract and rum.
• Add one egg yolk at a time, scraping bowl with a rubber spatula.
• In a separate bowl, sift all dry ingredients: Salt, flour, baking powder, nutmeg and cinnamon.
• In an alternating pattern, add flour mix and evaporated milk. Start with a 1/2 cup flour then 1/2 cup milk until completely incorporated.
• In a greased bunt pan, add cake mixture.
• Cook for 30 minutes. Check cake with toothpick.
• When done, allow cake to cool.
• Add favorite topping.
• Enjoy!
