4 cups plain Greek Yogurt (1 large container)
1/2 cup sugar
1/2 cup light corn syrup
1 cup peanut butter
1 lb strawberries (fresh or frozen)
1 tsb. salt
DirectionsMelt the peanut butter in the microwave for 1 minute.
While it is cooling, mix together the yogurt, sugar and corn syrup until thoroughly combined. Mix in the peanut butter and stir until fully incorporated. Slice the strawberries thin either with a knife or an egg slicer and fold into the mixture.
Chill for at least 1 hour and up to 24 hours.
Churn in your ice cream maker per your manufacturer's instructions, about 30 minutes. Place in the freezer for 1 hour for soft serve or 6 to 8 hours for hard set.
