Vegetarian Pho



Ingredients

• 128 oz Vegetable broth
• 3 Cinnamon sticks
• 4 Star Annise pods
• 2 Tsp Cloves
• 4 Garlic cloves, peeled
• 4 oz Low sodium soy sauce
• 1 Package rice noodles
• 1 Package baby portobello, sliced thin
• 1 Onion, sliced thin
• 1 Red bell pepper, sliced thin
• 1 Package snow peas
• 1 Lime, quartered
• Canned water chestnuts, drained
• Canned bamboo shoots, drained
• Chili pepper, sliced thin
• Basil

Directions

Pho Broth
• In a medium stock pot, add vegetable broth, cinnamon sticks, star anise, cloves, garlic and soy sauce. Heat to a light boil for 25 mins. Strain broth and return to the pot to keep hot.

Rice noodles
• Cook noodles per the instructions on the package.
• Assemble your bowl of Pho to your liking.
