Zen Teriyaki



Ingredients

Teriyaki Sauce
1/2 cup raw organic sugar
1/2 cup low sodium soy sauce
1/4 cup organic apple cider vinegar
1/2 tsp of sesame seeds
1 minced garlic clove
1/8 tsp of raw ginger
1/8 tsp of course ground black pepper
1/tbsp of cornstarch

Rice
1 cup of uncooked white rice
Dash of salt
Dash of olive oil
Dash of turmeric

Veggies and Protein
1 tbs olive oil
1 cup uncooked protein
1/4 cup cubed red onion
1/4 cup cubed red, yellow and green peppers
1 cup of broccoli florets
1/4 cup of pineapple chunks

Directions

Teriyaki Sauce
Whisk all ingredients in a sauce pan, bring to a slow boil until the sauce thickens. Remove from heat, set aside to cool at room temperature.

Rice
Combine two cups of hot water, rice, salt and olive oil in a sauce pan. Bring to a boil and cook to desired tenderness. Drain any excess water, add dash of turmeric. Set aside.

Veggies and Protein
Saute protein (tofu, chicken, shrimp or salmon) to desired tenderness. Next, add red onion, peppers, broccoli florets, pineapple chunks. Saute for about 2 minutes then add 1/2 cup of teriyaki sauce, stir and bring to slight boil.

Place rice on a plate; top with protein & veggies. Garnish with sesame seeds if desired.

Viola! Zen Teriyaki. Yum!
