In the Spotlight: Cherry Rankin shares her recipe for Peaches and Cream

TALLAHASSEE, Fla. (WCTV) - Cherry Rankin shared the following recipe for a peaches and cream, just in time for the summer:

Peaches and Cream Delight

Ingredients

• 8 oz Cream cheese
• 1 Box powdered sugar
• 4 tablespoons Peach jello gelatin
• 8 oz Cool Whip
• 1 Bag (24 count) Chessmen
• 1/4 Teaspoon vanilla extract
• 1/4 Teaspoon Peach extract (optional)
• 1 (21 oz) can Peach Pie filling

Instructions

• Beat cream cheese until smooth add powdered sugar, peach jello and extracts
• Remove from mix fold in cool whip
• Layer bottom of pan with Chessmen cookies top with cream cheese mixture and Peach pie filling
• Repeat until you use all the cream cheese mixture and pie fillings
• Top with cookies
• Keep in refrigerator until time to serve
